Tomato, Sausage, and Ravioli Soup


  • 1 tablespoon oil
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 1 pound ground Italian sausage
  • 1 teaspoon salt
  • Pepper, to taste
  • 1 (28-ounces) can crushed tomatoes
  • 4 cups chicken broth
  • 12 ounces frozen cheese ravioli
  • 2 cups fresh spinach
  • 2 tablespoons chopped fresh basil
  • Grated Parmesan cheese, for serving


  1. In a large stockpot, heat oil over medium-high, add onion and sauté until translucent, about 5 minutes. Add garlic cook for 1 minute or until fragrant. Add sausage, salt, and pepper; cooking until sausage is no longer pink. Stir in crushed tomatoes and chicken broth; bring to a boil, reduce heat to low. Cover and simmer 10-15 minutes. Add ravioli and cook according to package directions or until tender. Stir in spinach and basil. Serve with grated Parmesan.
