  • 1 ½ – 2 pounds sweet potatoes (about 4 medium), roasted and peeled
  • ½ cup milk or cream
  • 1 cup brown sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon salt
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 eggs, lightly beaten
  • 2 prepared, regular pie crusts

  1. Preheat oven to 350 degrees. In a large bowl, mash sweet potatoes until smooth. Stir in flour, cinnamon, nutmeg, ginger, salt, butter, vanilla and eggs. Stir until mixture is smooth.
  2. Pour half of the filling into unbaked pie crust. Place pie on a baking sheet and bake until set, about 55-60 minutes, or until knife inserted in center comes out clean. Allow to cool completely before serving, about 2 hours.
