- 1 ½ – 2 pounds sweet potatoes (about 4 medium), roasted and peeled
- ½ cup milk or cream
- 1 cup brown sugar
- 2 tablespoons flour
- 1 teaspoon cinnamon

- ¼ teaspoon salt
- 4 tablespoons butter, melted

- Preheat oven to 350 degrees. In a large bowl, mash sweet potatoes until smooth. Stir in flour, cinnamon, nutmeg, ginger, salt, butter, vanilla and eggs. Stir until mixture is smooth.
- Pour half of the filling into unbaked pie crust. Place pie on a baking sheet and bake until set, about 55-60 minutes, or until knife inserted in center comes out clean. Allow to cool completely before serving, about 2 hours.
