Any salad with Mandarin oranges on it has my attention. This one is not an exception. Another fantastic post by Gina. I had never heard of having green beans on a salad before, but it was definitely good! Not to mention it has northern beans too. Add that with the juiciness of the oranges and crisp lettuce, and you have an amazing salad. You could practically make a meal out of this!

½ head of romane lettuce, chopped
½ red onion, sliced
1 15oz can of northern beans
1 15oz can of mandarin oranges
1 cup of fresh or frozen green beans
¼ c Olive oil
2 T White wine vinegar
Salt
Pepper

- Cook the green beans 4-5 minutes or until tenders, and drain any water. Set aside to cool. Rinse the can of northern beans and drain the oranges. Add to the bowl, lettuce, onion, oranges, beans, and cooled green beans.
- In small bowl whisk together olive oil and vinegar together. Season with Salt and pepper.
- Toss all the ingredients and the dressing together and serve.
