This recipe will leave your mouth in a flavorful state. It combines the sweet tastes of brown sugar and molasses with the savory flavors of green and red peppers. This explosion of flavor includes Cajun seasoning, onion and a spicy kick from Andouille sausage.
Andouille sausage originated from France. It’s commonly used in Cajun cooking; it’s especially associated with Louisiana. It is pronounced “an-doo-ee, ahn-dwee; French ahn-doo-yuh” (http://dictionary.com).
This particular recipe serves four to six people. It takes roughly 25 minutes to make. The recipe does take some skill and accuracy, so make sure to follow the recipe steps. This is rated moderate.
First, get out the veggies and cut them into thin slices. Additionally, you’ll need to cut up the sausage. Add in the sweet stuff – molasses and brown sugar. Make sure the sausage is coated. This will give it a sweet and spicy flavor to beg for.
Put your ingredients in a skillet, preferably cast iron (as referenced in the recipe). You’ll want to cook it until its warm, and then put it under the broiler, setting it on High and letting it cook for about 10 minutes. Make sure to stir on occasion as mentioned in the recipe instructions. You’ll know when it’s done because the sausage will have a tasty caramelized look. This is when you set them on the back burner while you prepare the veggies. Continue to follow the directions and you’ll find yourself with a delicious plate in the end. Ingredients
- 1 pack of Andouille Sausage
- 1 cup brown sugar
- 1 cup molasses
- 1 green pepper
- 1 onion
- Cajun seasonings (Add to taste - Andouille is already a little spicy)
Directions
- Slice up your veggies into thin slices.
- Cut up Andouille into .5" slices and place in a mixing bowl.
- Add Molasses and Brown Sugar to the bowl and mix until the Andouille is well coated.
- Place ingredients into cast iron skillet. Cook until warmed and then place under the broiler on Hi for about 10 min, stir occasionally. When the sausage looks caramelized and a bit golden brown take them out and set them on the back burner.
- In another skillet add the sliced veggies with some olive oil. Add Cajun Seasoning and salt to taste.
- Sauté them until the onions are more translucent and a bit limp.
- Warm up the tortilla's according to the directions
- Start loading up those tortillas with sausage and veggies and enjoy!
