Summer Berry Chia Jam

Ingredients

 1 ½ cups fresh raspberries
 ½ cup fresh peaches, chopped (peeled and pitted)
 2 ¼ tsp lemon juice
 2 tbsp honey, use more if desired
 2 tbsp chia seeds

Directions

In a small saucepan over medium-low heat, place raspberries, peaches, lemon juice, and 1 tablespoon honey. Cook for 15 minutes partially covered until fruits breakdown.

Carefully transfer hot fruit into a small processor or mash directly in the pot, off of heat. Place fruit mixture back into the saucepan and add remaining honey. Over low heat, simmer for about 30 minutes or until it becomes a thin gel. Take the pan off the heat and let stand until cool.

Add chia seeds and mix together. Place jam into a glass jar & place in the fridge. (The chia seeds will thicken the jam a little within a few hours)
