Stuffed Pepper Jack-O-Lanterns

Ingredients

 5 medium orange bell peppers, tops cut off and deseeded
 2 cups cooked long grain white rice
 2 cups shredded chicken
 14 oz can tomato sauce
 14.50 oz can fire-roasted tomatoes, diced
 2 tsp salt
 2 tsp chili powder
 1 tsp paprika
 1 tsp garlic powder
 1 tsp onion powder
 1 cup shredded colby cheese

Directions

Preheat oven to 400°F. Place peppers in a baking dish and cook for 20 minutes. Remove from the oven and let rest about 5 minutes.

In a medium bowl, stir together the rice, shredded chicken, tomato sauce, diced tomatoes, salt, chili powder, paprika, garlic powder, and onion powder.

Fill peppers with the rice mixture and top with cheese. Bake for 20 minutes until the cheese is fully melted and slightly browned.
