Shrimp Salad Sandwich

This shrimp salad recipe with mayonnaise makes for a delicious quick meal. Whether served in a flatbread or a bun it’s sure to be a winner for lunch or dinner!

Ingredients

 1 lb cooked shrimp, shell and tails removed, chopped
 ¼ cup mayo
 1 tsp dried dill
 ½ tsp old bay seasoning
 3 hard-boiled eggs, finely chopped
 3 celery ribs, minced
 1 tsp lemon juice
 2 green onions, sliced, white and light green parts only
 ½ tsp salt
 ¼ tsp pepper
 4 hoagie rolls, sliced on top
 1 tbsp butter

Directions

In a medium bowl, combine the mayo, dill, old bay, lemon juice, and green onion. Season with salt and pepper. Stir in the shrimp and place in the refrigerator for 30 minutes.

In a large pan over medium heat, melt the butter. Place the rolls top side down and cook until lightly toasted and crispy.

Fill each roll with the salad and top with green onion.
