Shredded Chicken Caesar Salad

Invented in the 1920s, the Caesar salad is still very popular. Traditional Caesar dressing contains raw egg, but we made a slight tweak so you can have all of the flavor without the food safety worries! This recipe offers a great opportunity to use leftovers — whether it’s chicken, shrimp, steak, or hard-boiled eggs, the options are endless.

Ingredients

 2 tbsp mayo
 2 tsp lemon juice
 1 anchovy, finely minced into a paste, or 1 teaspoon anchovy paste
 ½ tsp Worcestershire sauce
 1 garlic clove, minced
 ¼ tsp salt
 ¼ tsp pepper
 ¼ cup 1canola oil
 ¼ cup grated parmesan cheese
 3 romaine hearts, chopped
 2 cups cooked chicken breasts, shredded Croutons

Directions

In a medium bowl, whisk together the mayo, lemon juice, anchovy, Worcestershire sauce, garlic, salt, and pepper. Slowly add the oil while stirring vigorously to combine; stir in the parmesan cheese to finish.

In a large bowl, toss together the romaine, chicken, and Caesar dressing. Serve with croutons on top.
