Preheat oven to 375°F. In a small bowl, stir together the ketchup, mustard, and brown sugar. Set aside.
In a large bowl, using your hands, combine the ground beef, egg, breadcrumbs, salt, pepper, onion, and half of the prepared sauce until fully incorporated. On a parchment-lined baking sheet, shape the mixture into the shape of a hand. Bake for 45-50 minutes.
Spoon over the remaining sauce and let rest for about 10 minutes before cutting and serving.
