Ingredients

Sauce/Marinade
 ½ cup pineapple juice
 ¼ cup teriyaki sauce
 2 tbsp honey
 ¼ tsp red pepper flakes
Skewers
2 lbs fresh pork tenderloin, cut into 2-inch cubes
 2 cups fresh pineapple chunks
1 red pepper, deseeded and cut into 2-inch pieces
1 orange pepper, deseeded and cut into 2-inch pieces
1 medium sweet onion, cut into 2-inch pieces
 2 tbsp canola oil

Directions

1

In a small bowl, stir together the pineapple juice, teriyaki sauce, honey, and red pepper flakes, divide in half.

2

Preheat the grill or grill pan to 425°. Arrange the pork, pineapple, peppers, and onions onto the skewers and brush with the sauce. Brush grill with oil, place the skewers onto the grill, and cook about 15-20 minutes, turning as you go, until the pork is cooked through, basting with the sauce as it cooks.

3

Meanwhile, in a small pan over medium heat, add the remaining sauce and reduce by half.

4

Remove the skewers from the grill, glaze with reduced sauce, and allow to rest for 5 minutes before serving.
