Oven-Baked Chicken Parmesan

Ingredients

 4 chicken breasts, beat 1/4 inch thick with tenderizer
 ½ cup flour
 2 large eggs
 3 oz freshly grated parmesan cheese
 2 cups panko bread crumbs
 ¼ tsp salt
 ¼ tsp pepper
 3 tbsp olive oil
 4 cups marinara sauce
 fresh basil

Directions

Preheat oven to 425 degrees, place a rimmed baking sheet in the oven to preheat with the oven. Do not remove until you are ready to put the chicken on the sheet. In a pie plate or shallow dish, beat eggs. In a large resealable bag, add flour and salt; shake well until blended together. In a shallow dish combine the parmesan, bread crumbs, salt, and pepper.

Place 1 chicken breast in the flour mix and seal bag, shake well until chicken is fully coated, repeat with the other three. Take each chicken breast and dip them into the beaten eggs coating completely. From the eggs, drop chicken into bread crumbs and flip so both sides have an even coating. Set aside on a plate until all chicken breasts have been completed.

Remove baking sheet from the oven; using a basting brush, spread the oil evenly on the sheet. Lay the chicken on the sheet. keeping them separated, and place in the oven. Bake until lightly browned, about 8-10 minutes. Flip chicken over and bake for another 5-6 minutes.

Top with marinara sauce, fresh grated parmesan, and fresh basil. Serve and enjoy!

Editors Note: For more of a crunch, on a separate baking sheet, toast the bread crumbs in the oven for 4-5 minutes. Remove from the oven, stirring around the sheet and baking another 3-4 minutes. Once toasted to your liking, let cool and continue with making bread crumb mixture.
