Oatmeal is a fantastic filling breakfast but some days time is of the essence. That’s what makes these oatmeal cups a great breakfast on the go. Make a batch, freeze half and never leave the house hungry!

Preheat the oven to 350°. In a medium bowl, stir together the oats, cinnamon, nutmeg, baking powder, and salt.
In a separate bowl, combine the eggs, honey, bananas, and vanilla. Slowly whisk in the almond milk and coconut oil.
Add the wet ingredients into the dry and stir together, then fold in chocolate chips and walnuts. Pour mixture into 12 greased muffin pans, and bake for 30 minutes. Let sit for 10 minutes before removing them from the pans and finish cooling on a wire rack.
