Maurice Salad

Popularized in Detroit, MI, by the J.L. Hudson department store, this salad continues to be served in many American restaurants. Once you try it, you won’t be surprised as to why. The homemade dressing is zesty, creamy, and fresh. Not to mention the abundance of protein this salad packs with the ham, turkey, cheese, and egg. This salad is worthy of being called a meal in itself.

Yields4 Servings

Ingredients

Dressing
 2 tbsp white vinegar
 1 ½ tsp lemon juice
 1 ½ tsp onion juice
 1 ½ tsp sugar
 1 ½ tsp Dijon mustard
 1 cup mayo
 1 Hard-boiled egg, diced
 2 tbsp chopped fresh parsley
 ½ tsp salt
  tsp pepper
Salad
 1 head iceberg lettuce, chopped or shredded
 1 lb ham, cubed
 1 lb turkey breasts, cubed
 1 lb swiss cheese, cubed
 ½ cup slivered sweet gherkins pickles (sweet relish, rinsed in a strainer, can be substituted)
 12 green olives stuffed with pimento, for garnish
 2 hard-boiled eggs, cut in half

Directions

In a medium bowl, whisk together the vinegar, lemon juice, sugar, and Dijon, until the sugar dissolves. Add the mayo, diced egg, parsley, salt, and pepper. Continue whisking until fully incorporated.

Arrange a bed of lettuce on each plate. Place 1⁄4 pound of ham, turkey, and swiss on each plate. Divide the pickles evenly over each serving. Garnish each salad with 4 olives and an egg half.
