In a medium bowl, combine the flour, baking powder, and salt.
In another medium bowl, using a hand mixer, cream together the butter and sugar, until light and fluffy. Add the eggs, one at a time, mixing well after each. Add the extracts and food dye, mixing again until smooth and the mix is fully colored. Add the flour mixture, combining until the dough comes together. Refrigerate the dough for 30 minutes. Repeat with the black cookie dough.
Preheat oven to 350°F. Using a cookie scoop, scoop the green dough into 1-inch balls. Scoop the black dough into half size balls, using floured hands, form into disks and wrap around the green balls and place on a parchment-lined baking sheet 2-inches apart. Bake for 16 minutes. Place on a cooling rack for 15 minutes before serving.
