In a mixer, combine the cheese, butter, and salt. Slowly add the flour, mixing until fully combined. Add the water ½ tablespoon at a time, until a dough forms. Form dough into a disk and wrap with plastic wrap, refrigerating for 1 hour.
Preheat oven to 375°F. Roll the dough out to ⅛-inch thick and cut into squares or use fun shaped cookie cutters. Place the cut-outs onto a baking sheet and bake for 15-20 minutes.
