In a large skillet over medium-high heat, warm ¼-inch of oil. Add half of the brussels sprouts and cook until browned, about 6 minutes. Add half of the cranberries, pineapple, and brandy; cook 2 minutes. Remove from pan onto paper towel-lined plates. Add additional oil to the pan if needed to return to ¼-inch. Repeat process with remaining ingredients.
