Cornmeal Waffles

Cornmeal may not be something that comes to mind when you think about making waffles but adding it brings a wonderful texture that we love! Pile them high with your favorite toppings and enjoy this twist on a breakfast staple.

Ingredients

 1 ¾ cups flour
 1 ¼ cups yellow cornmeal
 1 tbsp baking powder
 2 tbsp sugar
 1 tsp salt
 1 tsp vanilla extract
 2 cups milk
 3 tbsp vegetable oil
 2 large eggs

Directions

In a large bowl, combine all of the ingredients. Use a 1/3 measuring cup to pour the batter into the waffle iron. Cook until golden brown or until the steam dissipates from the waffle iron, about 2-3 minutes.

Serve topped with fruit, powder sugar, maple syrup, or honey.
