In a medium saucepan, stir together the sugar and cornstarch. Gradually stir in the milk continue whisking until smooth. Turn the heat to low and bring to a boil, stirring constantly until thickened. Remove from the heat, stir in the vanilla extract and food coloring. Cover and refrigerate until chilled.
Take small clear plastic cups and a permanent marker, drawing Frankenstein faces on the sides. Add the pudding to the cups, leaving about a ½-inch of free space from the top. Pour the cookie crumbs over the top and serve.
