The Cobb Salad

The Cobb Salad

Yields4 Servings

Ingredients

Dressing
 ¼ cup red wine vinegar
 1 tsp lemon juice
 ¾ tsp Worcestershire sauce
 ¼ tsp sugar
 ¼ cup mayo
 2 tsp salt
 2 tsp Dijon mustard
 1 small clove garlic, finely minced
 ¾ tsp pepper
 ¾ cup canola oil
Salad
 1 head romaine lettuce, shredded or chopped 2 cups baby spinach
 2 medium tomatoes, chopped
 6 bacon slices, cooked and crumbled
 2 cooked chicken breasts, shredded or cut into 1⁄4-inch chunks
 3 hard-boiled eggs, chopped
 1 avocado, chopped
 ½ cup shredded colby jack cheese

Directions

Blend all ingredients together, except water, olive oil and salad oil. Whisk in bowl. Mix both oils together, then drizzle oil in mixture until thick.
If dressing is too thick, add a little water to dressing
