Carrot Loaf Cake

You don’t have to be a rabbit to love this Carrot Loaf Cake! We’ve taken everything you love about carrot cake and baked it into a smaller loaf. This spice cake is filled with walnuts, carrots, and cinnamon, making it the perfect dessert or snack for those with a sweet tooth.

Ingredients

 ½ cup sugar
 ¼ cup brown sugar
 1 egg
 ½ cup vegetable oil
 1 tsp vanilla extract
 1 ½ cups packed grated carrots (about 2 medium carrots)
 1 ½ cups flour
 ½ tsp salt
 ½ tsp baking soda
 ¼ tsp baking powder
 1 tsp cinnamon
 ½ tsp ground nutmeg
 ½ cup chopped walnuts, optional
Frosting
 8 oz cream cheese
 1 cup powdered sugar
 ½ tsp vanilla extract

Directions

Preheat the oven to 325 degrees F. Lightly grease a 9×5-inch loaf pan.

In a large bowl, stir together the sugar, brown sugar, egg, oil, and vanilla, until fully combined, then stir in the carrots. In a separate bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, and walnuts. Add the flour mixture into the carrot mixture, stirring until just combined. Pour into the prepared loaf pan.

Bake for 50-55 minutes or until a toothpick inserted in the center of the bread comes out clean. Cool in the pan for 10 minutes before turning it out onto a wire rack to finish cooling completely.

In a medium bowl, using a hand mixer on medium speed, mix together the cream cheese, powdered sugar, and vanilla. Once the loaf has cooled, spread the frosting on top, slice, and serve.
