Breaded Chicken Cutlets

Ingredients

 1 cup panko bread crumbs
 2 tbsp grated parmesan cheese
 2 eggs
 4 chicken cutlets, pounded to about ¼-inch thick
 1 tsp salt
 ½ tsp pepper
 1 cup flour
 2 tsp canola oil
 2 tbsp butter
 1 lemon

Directions

In a shallow bowl, stir together the panko and parmesan cheese. In a second shallow bowl, beat the eggs. Season chicken with salt and pepper. In a large resealable bag, add the flour. Place the chicken in the flour and shake until fully coated. Remove chicken from the flour, shaking off any excess, dip into the egg, then into the panko mixture, gently pressing to ensure they stick. Gently shake off any excess crumbs. Transfer to a plate and repeat with remaining cutlets.

In a large skillet over medium-high heat and add the oil and butter. Add the chicken and cook for 5 minutes, until browned. Reduce the heat to medium and flip the chicken, cooking 3-5 minutes more. Serve with a squeeze of lemon!
