In a food processor, fitted with an “S” blade, pulse the cookies into a powder. In a medium bowl, stir together the cream cheese and ground cookies. Refrigerate for 1 hour.
Using a cookie scoop, scoop and roll into 1-inch balls. Place back in the refrigerator for 10 minutes. In a double boiler, melt chocolate chips and coconut oil together until fully melted, stirring constantly. Dip and roll the balls in the chocolate. Before the chocolate hardens, place the candy eyes in the middle and insert halved cookies into the sides, making wings. Refrigerate for 1-3 hours, allowing the chocolate to harden.
