Air Fryer Zucchini and Yellow Squash Au Gratin

Ingredients

 1 small zucchini, sliced
 1 small yellow squash, sliced
 1 tbsp butter
 3 tsp flour
 ¾ cup milk
 ½ tsp salt
 ¼ tsp pepper
 ¼ tsp onion powder
 ¼ tsp garlic powder
 ¼ cup panko breadcrumbs
 2 tbsp grated Parmesan cheese
 Oil spray

Directions

Preheat the air fryer to 400 degrees F (200 degrees C). Add the zucchini and squash to the air fryer, spraying lightly with oil, and cook for 13-17 minutes, stirring twice while cooking.

Meanwhile, in a small saucepan over medium heat, melt the butter. Whisk in the flour, stirring continuously for 2 minutes. Gradually add in the milk, stirring after each addition. Add in the salt, pepper, onion powder, and garlic powder, stirring until combined.

In a small bowl, combine the panko and Parmesan.

In a 6-inch baking dish, arrange the zucchini and squash, pour in the sauce, and top with the panko mixture. Reduce the air fryer temperature to 360 degrees F (180 degrees C). Cover the dish with foil and bake for 13-17 minutes. Remove the foil and cook for 3-5 minutes more until golden and bubbly.
