Air Fryer Twice Baked Potatoes
Who doesn’t love a classic twice-baked potato? But who also loves how complicated and time-consuming it can be to make them? Not anymore! Let your air fryer do the hard work for you. So easy and so delicious – you’ll wonder why you ever made them any other way. Just top with cheese, bacon, and sour cream, and enjoy!

Preheat the air fryer to 365 degrees F.
Scoop out the insides of the halved potatoes and place them in a medium bowl, leaving some potatoes in the skin. Add the sour cream, ¼ cup of the cheese, 3 tablespoons bacon, salt, and pepper to the bowl, stirring and mashing until everything is combined.
Evenly divide the potato mixture into the skins. Add to the air fryer and cook for 6-8 minutes. Top with the remaining cheese and bacon, return to the air fryer and cook for 2-4 minutes more until the cheese is fully melted.
Carefully remove from the air fryer, top with sour cream and parsley.
