Tex Mex Stuffed Peppers

A comfort food classic gets a tex-mex makeover! All of the familiar ingredients of stuffed peppers are here but with a little twist. Seasoned with taco seasoning and filled to the brim with rice, beef, black beans, and shredded cheese, you’re in for a world of flavor perfect for any night!

Ingredients

 4 medium green peppers, cored
 1 tbsp (15 ml) canola oil
 8 oz (227 g) ground beef
 1 tbsp (11 g) tomato paste
 ½ tsp dried oregano
 ½ tsp ground cumin
 ½ tsp chili powder
 ½ tsp paprika
 ½ tsp salt
 ¼ tsp pepper
 1 (15-ounce [444 g]) can corn, drained
 1 (15-ounce [444 g]) can black beans, drained
 1 (15-ounce [444 g]) can diced tomatoes with green chilies
 1 cup (195 g) cooked rice
 Oil spray
 ½ cup (41 g) shredded Mexican blend cheese

Directions

Place the peppers in the air fryer, spray with oil, and cook at 380 degrees F (190 degrees C) for 10 minutes.

Meanwhile, in a large pan over medium heat, warm the oil. Add the ground beef and cook for 5-7 minutes, until no longer pink. Add the tomato paste, oregano, cumin, chili powder, paprika, salt, and pepper, stirring together and cooking for 2 minutes more. Pour in the corn, beans, tomatoes, and rice, stir to combine.

Fill each pepper equally with the beef mixture, top with cheese, and cook for 2-6 minutes or until the cheese is melted.
