Air Fryer Sweet Chili Glazed Salmon with Quinoa for Two

This beautiful dish comes together so easily, you just might feel guilty! Who am I kidding, there’s zero guilt here. Salmon gets coated in an Asian-inspired, two-ingredient glaze, and tops a bowl full of protein-packed quinoa and roasted vegetables making for one truly satisfying dinner.

Ingredients

 1 small head broccoli, cut into florets
 1 small red onion, quartered
 ½ cup cup (85 g) quinoa 
 2 (6-ounce) salmon fillets 
 ½ tsp (3 g) salt 
 ¼ tsp (.6 g) pepper 
 ¼ tsp (.5 g) paprika 
 2 tbsp (34.5 g) sweet chili sauce
 1 ½ tbsp (24.5 g) low-sodium soy sauce
 Spray oil

Directions

Preheat the air fryer to 400 degrees F (200 degrees C). Add the broccoli and onions to the air fryer, spray with oil, and cook for 5 minutes.

In a medium saucepan, cook the quinoa according to the package directions.

Meanwhile, season the salmon with salt, pepper, and paprika. Stir the broccoli and onions, spray with additional oil, and place the salmon on top. Cook for 8-10 minutes.

In a small bowl, combine the chili sauce and soy sauce, carefully spread over the salmon.

Layer the quinoa and vegetables in two serving bowls, and top with the salmon and any remaining sauce.
