Air Fryer Strawberry Shortcakes

Ingredients

 8 oz strawberries, sliced
 2 tbsp sugar
 2 tsp balsamic vinegar
Biscuits
 1 cup flour
 2 tsp baking powder
 2 tbsp sugar
  tsp salt
 3 tbsp butter, cut into ½ inch cubes
 ½ cup half & half
Whipped Cream
 1 cup heavy cream
 1 tbsp brown sugar
 ¼ tsp vanilla extract

Directions

In a small bowl, toss together the strawberries, sugar, and vinegar. Let macerate for at least 20 minutes, until the sugar has dissolved and the juices are extracted.

Preheat the air fryer to 370 degrees F (190 degrees C). In a medium bowl, stir together the flour, baking powder, sugar, and salt. Using your hands, cut in the butter until the mixture is in pea-sized lumps. Pour the half & half into the dry ingredients, and gently stir until fully combined.

Gently knead the dough just until it holds together and is smooth. Using your hands, shape into a square or circle and flatten to 1-inch thick. Cut the dough evenly into 4, carefully place them in a parchment-lined air fryer, and, optionally, brush with milk. Cook for 6-10 minutes or until golden brown.

In a medium bowl, using a hand mixer on medium speed, whip the heavy cream until stiff peaks form. Gently fold in the brown sugar and vanilla until fully mixed through. Assemble as desired.
