Air Fryer Shrimp Lo Mein

Ingredients

 1 small carrot, sliced
 1 red pepper, thinly sliced
 ½ cup (62 g) sliced water chestnuts
 ½ cup (49 g) snap peas
 8 oz (227 g) shrimp, peeled, deveined, and tails removed
 8 oz (227 g) lo mein egg noodles
 8 cups (90 g) baby spinach

Directions

Preheat the air fryer to 400 degrees F (200 degrees C).

Spray the air fryer with oil, add the carrots and cook for 4-8 minutes. Add the peppers and cook for 4-8 minutes, then add the water chestnuts, peas, and shrimp, continuing to cook for 4-8 minutes more.

Meanwhile, bring a pot of water to a boil and cook the noodles according to package directions; drain and return to the pot.

In a small bowl, whisk together the soy sauce, sugar, sesame oil, ginger, garlic, and Sriracha; set aside.

Add the shrimp, vegetables, spinach, and sauce mixture to the noodles. Stir to combine, and serve.
