Sausage, Pepper, and Onion Hoagies

Sausage, peppers, and onions are a classic combination and one that you’ll see a few times in this book. In its first appearance, you have this trio slathered in a tomato-based sauce and loaded into a hoagie roll! All I can say is ‘Yes, please!’ Trust me, your mouth will thank you!

Ingredients

 1 small onion, thinly sliced
 1 medium green pepper, thinly sliced
 ½ tsp Italian seasoning
 ¼ tsp salt
 ¼ tsp pepper
 8 oz (227 g) sweet Italian sausage links
 2 garlic cloves, minced
 ¼ cup (59 ml) white wine
 ¼ cup (59 ml) water
 1 tbsp (11 g) tomato paste
 4 slices provolone cheese
 2 hoagie rolls, toasted

Directions

Preheat the air fryer to 360 degrees F (180 degrees C). Add the onions, peppers, Italian seasoning, salt, pepper, and sausage to the air fryer. Spray with oil and cook for 16-20 minutes, stirring halfway through.

In a medium saucepan over medium heat, add the roasted peppers and onions, garlic, white wine, water, and tomato paste. Slice the sausages diagonally and add to the pan. Cook for about 4-5 minutes, until the mixture thickens slightly. On each hoagie roll, place a slice of cheese and half of the sausage mixture.
