Air Fryer Santa Fe Steak Salad for Two

Does it get any more American than throwing a steak on salad and calling it a meal? Whoever came up with the idea is a genius in my opinion, though. While I have had many steak salads, this one is one of my favorites! Inspired by the bold flavors of Santa Fe, this salad has all the makings for a delicious and satisfying meal.

Ingredients

Dressing
 ¼ cup (59 ml) prepared ranch
 2 tbsp (29 g) salsa
 ¼ tsp hot sauce
 ¼ tsp paprika
  tsp cayenne pepper
 ¼ tsp ground cumin
Ingredients
 ¼ tsp pepper
 2 tsp (3 g) taco seasoning
 1 (8-ounce [227 g]) skirt steak
 1 (6-ounce [170 g]) bag baby spinach
 1 (10-ounce [283.5 g]) bag lettuce
 1 (15-ounce [425 g]) can black beans, rinsed and drained
 1 (8-ounce [227 g]) can sliced black olives
 1 avocado peeled, pitted, and sliced
 1 cup (136 g) grape tomatoes, halved
 1 (15-ounce [425 g]) can hominy, drained
 1 cup (112 g) shredded cheddar cheese
 ¼ cup (11 g) chopped fresh cilantro
 1 lime, cut into wedges

Directions

In a medium bowl, stir together the ranch, salsa, hot sauce, paprika, cayenne, and cumin. Cover and refrigerate.

Preheat the air fryer to 400 degrees F (200 degrees C).

In a small bowl, combine the pepper and taco seasoning. Season the steak on both sides. Spray the air fryer with oil, add the steak, spray with oil, and cook for 6-10 minutes, flipping halfway through. Let rest for 10 minutes before slicing into strips, cutting across the grain.

Meanwhile, assemble the salad with spinach, lettuce, black beans, olives, avocado, tomatoes, hominy, and cheese. Top with the sliced steak, cilantro, and a lime wedge. Serve with the dressing on the side.
