Air Fryer Country Fried Pork Cutlets

A mashup of country fried steak and breaded pork chops, I bring you, country fried pork! Made with tenderloin that’s sliced into medallions and breaded in a fried chicken coating. It’s only made better being topped with country gravy! Serve it alongside your favorite vegetable and dinner is ready!

Ingredients

 8 oz pork tenderloin, cut into 1-inch thick slices
 1 tsp salt
 1 tsp pepper
 1 tsp garlic powder
 1 tsp paprika
 ½ tsp onion powder
 ½ tsp Italian seasoning
  cup flour
 2 tbsp cornstarch
 ½ tsp baking powder
 2 eggs
Gravy
 1 tbsp butter
 1 tbsp flour
 ½ cup milk, warmed
 ½ tsp salt
 ½ tsp pepper

Directions

Using the palm of your hand, press the pork into thin cutlets, about a 1⁄4-inch thick.

In a small bowl, combine the salt, pepper, garlic powder, paprika, onion powder, and Italian seasoning. Season the pork on both sides with half of the spice mixture and set aside.

In a large resealable bag, mix together the flour, cornstarch, baking powder, and the remaining spice mix. In a medium bowl, beat the eggs. Place the pork in the flour mixture and shake until fully coated. Dip the pork into the eggs, then return to the flour mixture. Transfer the pork to a plate and allow it to rest for 15 minutes.

Preheat the air fryer to 400 degrees F (200 degrees C). Spray the air fryer with oil, add the pork, spray with oil, and cook for 12-16 minutes, flipping halfway through, and spraying with oil.

Meanwhile, in a medium saucepan over medium heat, melt the butter. Add the flour, stirring continuously, about 2 minutes, until the flour starts to resemble the color of peanut butter. Gradually pour in the milk, stirring after each addition. Once the mixture begins to thicken, reduce the heat to low and stir in the salt and pepper.

Serve the pork topped with the country gravy and your choice of sides.
