Mexican Shredded Chicken Taquitos

Tonight’s dinner is as easy as 1-2-3. Shredded chicken is rolled into crispy tortillas and melty cheese making for a fun-textured, flavor-rich dinner. The air fryer does double duty with this recipe, you’ll cook the chicken and crisp the taquitos in it!

Ingredients

 1 garlic clove, minced
 1 tsp chili powder
 ½ tsp paprika
 ½ tsp dried oregano
 ½ tsp ground cumin
 ¼ tsp pepper
 ¼ tsp salt
 1 tsp canola oil
 8 oz (227 g) boneless skinless chicken thighs
 ½ cup (41 g) shredded Mexican cheese blend
 4 (6-inch) tortillas
 Oil spray
Toppings
 Guacamole
 Sour cream
 Salsa
 Pickled onions

Directions

Preheat the air fryer to 380 degrees F (190 degrees C).

In a resealable bag, combine the garlic, chili powder, paprika, oregano, cumin, pepper, and salt. Add the chicken and shake to coat. Spray the air fryer with oil, add the chicken, spray with oil, and cook for 12-16 minutes, flipping halfway through. Let the chicken rest for 10 minutes before shredding.

Fill each tortilla evenly with the shredded chicken, 2 tablespoons of cheese, and roll closed. Spray the air fryer with oil, add the taquitos, seam side down, spray with oil, and cook for 6-10 minutes, flipping halfway through. Serve with toppings of choice.
