Air Fryer Crispy Chicken Sandwiches for Two

Skip the drive-thru with these air-fried crispy chicken sandwiches for two! They’re the perfect way to indulge in your “guilty pleasures” without feeling the guilt. Served with herbed mayo, shredded lettuce, and pickles, these crispy sandwiches are a truly delicious dinner for two! And, thanks to air frying technology, they have less oil than traditional fried chicken sandwiches.

Ingredients

Herb Mayo
 ½ cup (112 g) mayo
 1 ½ tsp (8 ml) milk
 ½ tsp vinegar
 1 tsp dried parsley
 ¼ tsp onion powder
 ¼ tsp garlic powder
  tsp dried thyme
  tsp salt
  tsp pepper
Chicken
 2 boneless, skinless chicken thighs
 1 tsp salt
 1 tsp pepper
 1 tsp garlic powder
 1 tsp paprika
 ½ tsp onion powder
 ½ tsp Italian seasoning
 ½ cup (68 g) flour
 ½ tsp baking powder
 2 tbsp (15 g) cornstarch
 1 egg
 2 tsp (10 ml) hot sauce
 3 tbsp (44 ml) milk
 Oil spray
 4 pickles
 2 brioche buns
 Shredded lettuce

Directions

In a medium bowl, stir together the mayo, milk, vinegar, parsley, onion powder, garlic powder, thyme, salt, and pepper, and refrigerate. (This recipe will likely make more than you’ll use for the two sandwiches)

In a small bowl, combine the salt, pepper, garlic powder, paprika, onion powder, and Italian seasoning. Season both sides of the chicken with half of the spice mixture and set aside.

In a large resealable bag, mix together the flour, baking powder, cornstarch, and the remaining spice mixture. In a medium bowl, beat together the egg, hot sauce, and milk.

Place the chicken in the flour mixture and shake until fully coated. Dip the chicken into the egg mixture, then return to the flour mixture. Transfer the chicken to a plate and allow the chicken to rest for 15 minutes.

Preheat the air fryer to 350 degrees F (170 degrees C). Spray the air fryer with oil, add the chicken, and spray thoroughly with oil. Cook for 10-14 minutes, flipping halfway through and spraying with additional oil. Once done, let rest for 5 minutes. Layer the sandwich together on the buns with the mayo, pickles, chicken, and lettuce. Enjoy!
