Cajun Chicken Cheesesteaks

While I love the classic Philly cheesesteak, I have made room in my heart for this Cajun-inspired version. Hoagie rolls are stuffed with Cajun seasoned chicken, peppers, and onions. Top it all off with a simple Cajun bechamel sauce and you won’t be missing the steak in this sandwich!

Ingredients

 8 oz (227 g) chicken thighs, cut into bite-sized pieces
 ½ tsp salt
 ¼ tsp pepper
 ¼ tsp chili powder
 ¼ tsp Cajun seasoning
 1 small red pepper, diced
 1 small onion, diced
 2 hoagie rolls
 4 slices provolone cheese
Sauce
 2 tbsp (28 g) butter
 2 tbsp (16 g) flour
 1 cup (240 ml) milk
 2 tsp (11 g) Dijon mustard
 ¼ tsp salt
 ¼ tsp pepper
 1 tsp Cajun seasoning

Directions

In a small bowl, toss together the chicken, salt, pepper, chili powder, and Cajun seasoning until fully coated.

Preheat the air fryer to 350 degrees F (170 degrees C). Spray the air fryer with oil, add the chicken, peppers, and onions, spray with oil, and cook for 10-14 minutes, stirring and spraying again halfway through.

Meanwhile, in a small saucepan over medium heat, melt the butter. Whisk in the flour, stirring continuously for 2 minutes. Gradually add in the milk, stirring after each addition. Add in the mustard, salt, pepper, and Cajun seasoning, stirring until combined. Set aside.

Place two slices of cheese per hoagie roll. Add the chicken and vegetables and top with the sauce.
