Air Fryer Banh Mi Meatball Bowls

Ingredients

 1 cup basmati
 8 oz ground pork
 1 tbsp low-sodium soy sauce
 ¼ tsp ground ginger
 ½ tsp toasted sesame oil
 1 tbsp brown sugar
 2 tbsp panko breadcrumbs
 ¼ tsp salt
 1 ½ tsp Sriracha chili sauce
 1 green onion, sliced
 1 small cucumber, peeled into ribbons
 1 small carrot, cut into matchsticks
Sriracha Mayo
 3 tbsp mayo
 1 tbsp Sriracha chili sauce
 1 clove garlic, minced
 1 tbsp hoisin sauce

Directions

In a small pan, cook the rice according to the package instructions. Preheat the air fryer to 400 degrees F (200 degrees C).

In a small bowl, combine the pork, soy sauce, ginger, sesame oil, brown sugar, panko, salt, and Sriracha. Using an ice cream scoop or your hands, form into 6 equally-sized meatballs. Place them in the air fryer, and cook for 10 minutes.

Meanwhile, in a small bowl, combine the mayo, Sriracha, garlic, and hoisin sauce. Set aside.

Serve the meatballs over the rice with sliced cucumbers and carrots, topping with cilantro, green onion, and the sriracha mayo.
