- In a medium mixing bowl, cream together butter and sugar. Add egg and vanilla extract; mix thoroughly. In a separate small bowl, combine flour, baking powder, salt, and almonds. Stir flour mixture into butter mixture until evenly combined. Divide batter into three equal parts and wrap each in plastic wrap. Refrigerate until firm, about 1 hour.
- Preheat oven to 350 degrees. Form one dough into a 10-inch long log and place on a parchment-lined baking sheet. Press to flatten slightly and bake until dough has dried but not browned, about 12-15 minutes. Make a well down the middle of the cookie and fill the well with jam. Place back in oven and cook until browned, about 10 additional minutes. In a small bowl, stir powdered sugar and water into a glaze. Drizzle cooled cookies and allow to set 10 minutes.
