It’s day 3 of Up A Creek Without A Kitchen!
Tonight is a leftover’s night. I am a huge cheese lover, but I will admit that eating a grilled cheese sandwich as an adult can be a bit embarrassing. (Yes, I know. Who cares what others think. hehe) Well, I am going to give you simple directions to an embarrassment free Grown Up Grilled Cheese Sandwich using leftovers from the Basic Panini recipe.
I made this recipe for four people.
Serves 4 Prep Time 5 Minutes Cook Time 6 Minutes

- 8 slices of Bread of your choice. I used leftover focaccia.
- 16 slices of Provolone Cheese Slices
- 8-16 Tomato Slices (two small slices or 1 large)
- Garlic Salt (add to taste)
- 1/3 cup Olive Oil (softened butter is great too!)

First, get that griddle warming up. I’d recommend 300 degrees F.
Brush the side of the bread that will be on the griddle with olive oil and then lightly sprinkle with garlic salt.
Lay down 1 slice of the provolone, then a slice or two of tomato (or some spinach if you’re feeling ambitious!), and then a second slice of provolone.
Place the second piece of bread on top and grill away! One of the easiest lunches or dinners ever! My 3 year old son loves these!
