Gluten-Free Apple Cinnamon Coffee Cake

It’s not only delicious, healthy, and versatile; it’s also an easy recipe to make and serve. The recipe takes roughly 60 minutes from start to finish. However, once complete, you can just flip it over and pop it out of the dish.

This recipe will allow you to step out of your elements and try new things. It has ingredients like coconut milk, brown rice flour, and almond meal. Additionally, it suggests the use of flax seed which is great for the diet. Flax seed has omega-3 which has numerous health benefits. Omega-3 is a fatty acid that the human body can’t produce.   • 3 bananas
  • 1 cup unsweetened applesauce
  • 1 tsp. Vanilla
  • 2 eggs
  • ½ cup unsweetened coconut milk
  • 1 cup brown rice flour
  • 1 cup almond meal
  • 1 cup ground flax seed (if you want less flax, just up the other flours to make 3 cups total)
  • 1 ½ tsp. baking soda
  • 1 ½ tsp. baking powder
  • 2 Granny Smith apples
  • 2 teaspoons cinnamon
  • ¼ cup brown sugar
  • 1 deep dish stoneware pan (any size or shape you want)

  1. In a mixer (or by hand) beat together the bananas and applesauce until very smooth. Add vanilla, coconut milk and eggs. Mix well. Add flours and baking powder/baking soda. Mix until incorporated.
  2. Peel and cut apples as thick or thin as you like. I cut mine into 16 pieces for each apple. I peel, use the apple cutter, which make 8 slices and then I cut each slice in half.
  3. Line pan with apples. Sprinkle brown sugar and cinnamon evenly over the apples. Pour batter evenly over apples.
  4. Bake in a 350 degree oven for about 20-35 minutes depending on which pan you use. If using stoneware, it takes a little longer.
  5. You can turn the whole thing upside down for easier serving. Stoneware is also a nonstick surface so it may be easier in that kind of pan. Just make sure to loosen the edges and sides so you can easily get it out in one whole piece.
