However, portion control is important. This recipe is perfect for that. It is a single serving dish. Additionally, the ingredients allow for a healthy alternative to a fried egg, topped with cheese, and served with white bread. The list includes whole grain bread, one egg, arugula leaves, salt, pepper, and low fat mozzarella cheese. Whole grain bread is a better alternative to most white breads. - Take a piece of bread and cut out a circle in the center. If you have a small circular glass you could use that as well.Lightly butter both sides of the toast and bread circle.
- In a bowl mix together egg, arugula leaves, a small handful of grated cheese, and salt and pepper to taste.
- Then place bread on a flat skillet heated to medium and pour egg mixture into the hole.
- Flip after 2-3 mins and cook for another 2-3 minutes. Cook bread circle on the side Serve warm.
