Eggs in a Nest

 Many people deem eggs as unhealthy because of the fat content and how it can affect cholesterol. However, there’s another side to eggs. These little bad boys are full of protein. Eggs can be a great start to the day. Protein provides energy to the body and can enrich the morning. Therefore, unless you have strict dietary needs, you won’t need to avoid them. However, portion control is important. This recipe is perfect for that. It is a single serving dish. Additionally, the ingredients allow for a healthy alternative to a fried egg, topped with cheese, and served with white bread. The list includes whole grain bread, one egg, arugula leaves, salt, pepper, and low fat mozzarella cheese. Whole grain bread is a better alternative to most white breads. Plus, the leaves and low fat mozzarella cheese add a nice touch. The ingredients make for a powerful breakfast with an enriching earthy flavor. It’s also easy to make and only takes a few minutes.

To make this, just butter up some bread, and cut a circle out of the center. The author of the recipe suggests using a small glass for this. Mix up the ingredients, as directed. Put the bread into a frying pan. Fill the hole with the ingredients. The cook time is only about 4-6 minutes total (2-3 minutes per side).

    1. Take a piece of bread and cut out a circle in the center. If you have a small circular glass you could use that as well.Lightly butter both sides of the toast and bread circle.
    2. In a bowl mix together egg, arugula leaves, a small handful of grated cheese, and salt and pepper to taste.
    3. Then place bread on a flat skillet heated to medium and pour egg mixture into the hole.
    4. Flip after 2-3 mins and cook for another 2-3 minutes. Cook bread circle on the side Serve warm.
