When people hear the word vegan, I think they think that a diet like that would be boring. I beg to differ, with desserts like this Coconut Ice Cream, I have a hard time seeing the boring! We don’t have a vegan working in our test kitchens but we all agreed this was delicious! It would be great added to smoothies and with this warm weather coming up it couldn’t be better for summer.
- 2 Cups Coconut Milk
- 3/4 Cup Sugar
- 1 Teaspoon Vanilla Extract
- 1/4 Teaspoon Xanathan Gum
- Combine all ingredients into a blender and mix until sugar dissolves. Place into freezable container and freeze 4 hours or overnight.
