- Preheat electric skillet to medium or frying over medium heat. (Lightly coat with cooking spray if needed.)
- In a food processor or blender combine eggs, banana, and a pinch of nutmeg.
- Pour batter on to skillet splitting it among 3 cakes.
- Cook until bubbles begin to form on top of the cakes and they begin to solidify, and flip them over and cook for 1 minute.
- Remove from skillet and top with cinnamon and/or applesauce.
