This fabulous recipe, submitted by Gina, is one the whole family would enjoy. Eat it plain, or with your preferred butter spread, flavored or regular, its good no matter how you try it. Makes a great breakfast or a snack at any time of the day. I dare you to give it a try. Go ahead, do it! You won’t be disappointed!

1 2/3 cup all purpose flour
1 tsp baking soda
¼ tsp cinnamon
½ salt
1 cup plus 2 TBS sugar
2 eggs
½ c vegetable oil
3 bananas very ripe or frozen, mashed
2 TBS Greek yogurt
1 tsp vanilla

Preheat oven 350 degrees. Spray loaf pan with non stick spray.
Stir together Flour, baking soda, cinnamon, and salt. In a separate bowl beat sugar and eggs with a whisk until its light and fluffy. Drizzle in oil. Add the mashed bananas (if using frozen thaw bananas), yogurt, and vanilla. Fold in dry ingredients. Pour into loaf pan and bake for about 45-60 mins. When the top is browned and the knife comes out dry its done.
