  • 2 pounds ground round
  • 1 cup oatmeal
  • 4 slices bacon, cooked, drained of grease, crumbled
  • 1/3 cup white or yellow onion, very finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1/3 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic salt
  • 2/3 cup ketchup
  • 1/3 cup BBQ sauce (see recipe below)

  • 1/3 cup chili sauce
  • 1/3 cup brown sugar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

  1. Preheat oven to 350 degrees.
  2. In large bowl, with your hands, mix all ingredients of the meatloaf list, using only half of the bacon.
  3. In loaf pan, spread thin layer of BBQ sauce, sprinkle a small amount of bacon pieces over the sauce, and then add meatloaf mix. Spread remaining BBQ sauce over top of meatloaf, top with remaining bacon pieces.
  4. Bake for approximately one hour. Watch for active bubbling around edges. If BBQ sauce starts to brown too quickly, cover with foil during remaining cooking time. Using meat thermometer, internal temperature should be 160 degrees.
